Chocolate Covered Cookie Caramels

A Gooey caramel center, sandwiched between cookies, covered in white chocolate and sprinkled with your choice of sprinkles and you will get these Chocolate Covered Cookie Caramels !


Three textures in one, the very chewy caramel, crunch of the cookies and creaminess of the chocolate. Now, I had a craving for all three of these things a few days ago, and had come up with this totally quick and easy recipe.

The only drawback ..? Waiting an hour or so for the caramel to set ! After that, it is a breeze and you will soon be munching away ..


CHOCOLATE COVERED COOKIE CARAMELS


INGREDIENTS:

1 can (397g) Sweetened Condensed Milk
90g (3 ounces) Butter, chopped roughly
1/2 cup Light Brown Sugar, firmly packed
2 TB Golden Syrup {or honey/corn syrup/maple syrup
150g Tennis Cookies {Graham Crackers will do as well}
100g White Chocolate, melted
Sprinkles of your choice


DIRECTIONS:

1.) Place the Condensed Milk, Butter, Brown Sugar and Syrup in a medium saucepan - bring to the boil and reduce heat - simmer, while stirring continuously, 10 - 12 minutes or until caramel in color - remove from heat and cool for 5 - 7 minutes.
2.) Meanwhile, line a 20 x 20cm dish with baking paper - place a single layer of cookies on the bottom.
3.) Pour the caramel over the layer of cookies and top with another layer of cookies - chill for an hour or until set.
4.) Remove from the refrigerator and cut into your preferred size - cubes, rectangles or however you want to.
5.) Quickly dip the chilled pieces in the White Chocolate and place on a piece of aluminium foil - sprinkle over your choice of Sprinkles and place back in the refrigerator until the chocolate has set.
