Strawberry Toffee Fudge


I am totally in love with these little Strawberry Toffee Fudge hearts {or cubes!} They are the chewy kind of fudge, not the sugary type.

At first I wanted to add strawberry pudding powder, but as I started, I found absolutely NO strawberry instant pudding boxes in my pantry ~~~~  note to self :  double check ingredients before starting a recipe !



There I'm standing ... now what?  I simply used Nesquick Strawberry Milkshake powder - I really do not like the taste of strawberry food flavoring that much, therefore I did not even consider using only the flavoring.

As I started cutting the fudge, I found that they are sweet --- the sweet that you actually pronounce something like S-A-W-E-E-T !!! Yes, with all the exclamation marks..  The sweetness, however, did not stop me and the rest of the family to chew away until none were left.


STRAWBERRY TOFFEE FUDGE


INGREDIENTS:

2 cups Caster Sugar
1 cup Evaporated Milk
2 TB Butter
1/4 t Salt
2 cups Mini Marshmallows
3 TB Nesquick Strawberry Milkshake Powder
2 cups Icing Sugar
a Few Drops of Pink coloring
Sprinkles / Petit Dragees, to decorate

DIRECTIONS:

1.) Line a 20 x 30 cm baking dish with baking paper.
2.) Place the Caster Sugar, Evaporated Milk, Butter and Salt in a large saucepan - heat and boil the mixture, stirring frequently, for 4 - 5 minutes.
3.) Add the Marshmallows and stir until melted and combined - remove from heat.
4.) Mix the Milkshake Powder and the Icing Sugar - add to the mixture in the saucepan - stir in quickly.
5.) Add a few drops of food coloring, stir again and pour mixture into the prepared lined dish.
6.) Sprinkle over your choice of Sprinkles and/or Dragees - chill for 4 hours.
7.) Remove from the refrigerator and cut into heart shapes, using a cookie cutter, or cut into cubes.

Store in an airtight container in the refrigerator.
