Creamy Spaghetti Casserole

This rich and creamy spaghetti pasta is perfect for a busy weeknight dinner. I make this specific recipe quite often, because I normally have everything in my pantry and well, ground beef is a must in our house.

As this is a very filling meal, I only serve a crunchy green salad on the side.

However, it does happen that I use cream cheese instead of the ricotta, but I would then always use a low-fat cream cheese.

CREAMY SPAGHETTI PASTA

INGREDIENTS:

2 TB Olive Oil
500 Lean Ground Beef
1 t Salt, divided
1 Jar Spaghetti Sauce   {your favorite ~ about 1 1/2 cups}
250g Spaghetti
500g Ricotta Cheese
1 cup Sour Cream
1 1/2 t Italian Seasoning
1 t Garlic Powder
1/2 cup Cheddar Cheese, grated
Parsley, to garnish

DIRECTIONS:

1.) Pre-heat the oven to 180 deg C (350 deg F) - spray a 20 x 30cm oven dish with cooking oil.
2.) Heat the Olive Oil in a medium pan - add the Ground Beef and 1/2 t Salt - cook until the meat is done - add the Spaghetti Sauce, stir through and set aside.
3.) Cook the Spaghetti as per the instructions on the packet - drain and return to the saucepan.
4.) Stir in the Ricotta Cheese, Sour Cream, Italian Seasoning, Garlic Powder and the remaining 1/2 t Salt - mix well.
5.) Layer as follows in the prepared oven dish - half of the Meat / all the Spaghetti / remaining half of the Meat mixture - top with the Cheddar Cheese.
6.) Cover the dish with aluminum foil and bake 45 minutes.
7.) Remove the aluminum foil and bake a further 5 - 10 minutes.
8.) Garnish with Parsley and serve.
