Easy Honeycomb

I love Honeycomb and have always bought a slab whenever we had gone shopping, but without me even realizing it, the slabs have disappeared from the stores.

Lyle's Golden Syrup started selling these small recipe books recently, and it was only then, as I was leafing through the book and came across the recipe for Honeycomb , that I became aware of not having seen this popular candy in the stores anymore.

What surprised me even more, was the ease of making homemade Honeycomb ! To top it all - only 4 ingredients !

ImportantOnce you have poured the candy into the heatproof dish - do not try to make it level or touch it in any way because you want the air bubbles trapped inside.

And if your Valentine likes Honeycomb - include a little card/note with "Honeycomb for my Honey" with a nicely packed Honeycomb gift - sounds great, doesn't it ?!



1/2 cup Golden Syrup  {or Honey}

2 TB Water

3 cups Caster Sugar

2 TB Bicarbonate of Soda


1.) Line a 20 x 30cm heatproof dish with baking paper.

2.) Heat the Syrup or Honey, Water and the Caster Sugar together, in a large saucepan - bring to the boil an reduce heat to low - simmer for 5 - 10 minutes, stirring regularly.

3.) The mixture is ready when you drop a little into cold water and it becomes brittle.

4.) Remove from the heat and quickly stir in the Bicarbonate of Soda - the mixture will foam up immediately.

5.) Pour into the lined dish and leave at room temperature to set.  (Do not touch the mixture once you have poured it into the dish)

6.) When hardened break into chunks.

I stored my leftovers on a plate (open) in the refrigerator and it was even more brittle and dry the following day,,, that is, if you prefer it absolutely dry.
